In a festive display of traditional cooking, the Basic Education School (BES) secured 3rd place in the Pancit Batil Potun category during the Dayaw na Ibanag Anna Itawes Festival 5.0, held at the Mamba Gymnasium on October 16, 2024.
The team, composed of BES educators Ma. Fatima T. Baquiran, MST; Rovelyn G. Borquillo, LPT; Erwin V. Oamil Jr., LPT; and Vanessa S. Liban, MST, along with students Darylle T. Samonte from Grade 10-Roxas and Chris Joshua P. Soriano from Grade 10-Rizal, showcased their culinary skills by adding seafood elements to the traditional Tuguegarao Batil Patong.
In addition to this achievement, two more Louisian teams participated in other categories of the cookfest. The all-student team under the Pinataro category is composed of Isabel B. Braun and Marian Miracle C. Flores, both from Grade 11-St. Gregory the Great, Kyle Mitchel Tuddao from Grade 10-Roxas, and Clare Jamillah B. Gannaban from Grade 10-Rizal.
Pinataro, more commonly known as Bilo-bilo, is a popular ‘kakanin’ in the Philippines that incorporates ingredients in ‘gata’ or coconut milk. The team innovated this Filipino ‘meryenda’ by condensing the ingredients inside small rice balls.
Additionally, the other category focused on Zinagan, another popular dish in the Philippines, which is more often called ‘Dinuguan’ or pork blood stew. This category highlights dishes prepared through parent-student collaboration.
The Zinagan team is composed of parents/educators, Liza P. Maquera, MAEd, Pinky Pauline S. Macario, MST, Nemia D. Laureta, MAT, and Alejandra Baby S. Belen, LPT with students Mark Ecko M. Carag and Ma. Angela Precious M. Casibang, both from Grade 10-Mabini.
The team cooked Dunugetti, a pasta dish topped with pork blood stew, and Zinampling, which consists of crisp dumplings with Zinagan as their dipping sauce.
Melvie T. Mabbonag, MAEd-TEM, TLE Area Head, served as the overall person-in-charge of the three Louisian teams.
With the theme “Katutubong Karunungan Tungo sa Ingklusibong Kaunlaran,” Dayaw na Ibanag Anna Itawes Festival 5.0, which the Schools Division of Tuguegarao City organized, is not only a competition but a gathering that celebrates the diverse traditional foods in the Philippines.
